One of the things that I love to do is eat and if I’m correct lots of people probably agree with me on this subject. Now with that being said what I dislike are the restaurants that don’t follow the right course of action when it comes to cleanliness. I absolutely think KPHO (Dirty Dining) is right on the money when they follow these stories and those restaurants should pay the price – no customers until they clean up their acts. The other thing I like about this series is that they also highlight the good guys as well.

 

Every week CBS 5 News is sent a list of restaurants that have been recently inspected by Maricopa County’s Environmental Services Dept. Thanks to KPHO for publishing the facts. Here is the way in which they are rated “Restaurant Ratings“.

Do you ever check bathrooms before you eat at a restaurant, I check drains and restaurants for a living? I won’t eat until I check the bathroom, if its clean then probably (probably) the kitchen is clean. If you have a restaurant, staff must be taught that part of the process is cleaning. Everyday a certain station should be cleaned and then someone needs to double check. If a customer gets something in their food, the reputation can be sullied in that visit and those reviews sites are not forgiving.

  1. Daily cleaning, certain areas.
  2. Weekly cleaning.
  3. Inspection by someone who cares, not just someone that wants to go home.
  4. Inspection by management. If you set the standard – staff will comply.
  5. A German Cockroach can get by with just a speck of grease, don’t forget in between appliances.
  6. Use a checklist, its not tough. If you start out clean and keep it that way.

The Public is your Critic

  • Only takes one complaint, and if its online – it is there FOREVER. Those Dirty Dining shows are proof of that.
  • Make the weekly cleaning game with free appetizers etc. If staff doesn’t consider it work – it won’t be.
  • Set the standard, if you don’t then no one else will.

Nasty Restaurants and how do you tell how bad it might be? I usually run into the bathrooms, if it is nasty, generally speaking I’m out. If they can’t keep their bathrooms clean, then I’m positive their kitchen is a mess. I love those kitchens which are visible, if you can peak in that is a great thing.

Restaurants and cleaning:

  • Everyday someone should be cleaning.

  • Each day certain areas should be cleaned, areas not used daily should be rotated cleaned. 

  • There should be charts with duties and persons assigned.

  • Managers should check cleanliness daily. 

  • Degreasers and heavy duty equipment may be needed, and supplied so the staff can adequately perform their duties. 

 

I have been to a ton of restaurants and I have tuned down quite a few. I can’t do my job, if the grease is thick my product will never do the job. Now lets talk about cockroaches, German Cockroaches come in on the folds of food boxes. Once a stowaway enters the property there is almost a 0% chance of the owner/manager/staff fighting the situation. You need a Professional, because you need the right equipment and the right products with the knowledge. A single female roach can set in motion a infestation that can grow quickly.

The other a friend and myself visited a Pizza Place restaurant, before I even ordered I visited the bathroom. One of the cleanest bathrooms I’ve been in – in my life. That my friends is how I decide if I’m going to eat at a restaurant. Nothing would upset my intestinal track more than a sloppy disgusting dining place.

I’ll tell you another pet peeve, when an owner calls and I say you have to clean before I’ll take the account and when you come back nothing is done. Easy enough for me, I just won’t do the establishment, period. They are never going to be happy and neither will I. Restaurants should be cleaned at the end of each shift, they should then be cleaned weekly and then again on a monthly schedule depending on how busy they are. Each cleaning schedule can and should focus on certain things, again depending on the restaurant.

How do you know the problem is huge – when the cockroaches are everywhere?

The very minute you walk into the home, you know there are issues. How does the bug guy know? Let me share my observations:

  1. The cockroaches are in the door hinges or above the entry door into the home.
  2. The cockroaches are in the bedrooms.
  3. The cockroaches are in the living or dining rooms.
  4. The home has a distinct odor. Once you have been in a home with a severe cockroach problem you never forget that smell. The same applies to Bed Bugs and sometimes rats or rodents.

Did you know that a  smell can bring on a flood of memories, influence people’s moods and even affect their work performance. Maybe walking into a house where someone is baking cookies and you instantly recall your Grandmother in the kitchen or if your a pest operator walking into a place where the roaches far outnumber any other living things. Gives you the heebie jeebies right?

Sanitation in Restaurants, is it really that important?

 

YES, YES and YES again!

I would say that without a doubt the biggest challenge to restaurants is sanitation and if they did one thing and only one it would be to instruct their employee’s that it is IMPORTANT. I never had a chance to work in a restaurant but I did work at a Boy Scout Camp (Camp Berry) in the dining hall and I know we did a lot of cleaning everyday.

So let’s talk about procedures:

  1. Someone must be in charge, The General Manager or Manager at open and close are responsible – from them all procedures must flow.
  2. Each shift, a person must be in charge of cleaning.
  3. At closing someone must be in charge and instructed on cleaning procedures.

Those people must be held accountable, just missing one day can cause repercussions. I think I would make a great health inspector but I also think heads would roll. Some of the stuff that I see daily would just turn your stomach. Just last week a restaurant was closed for outbreak of bloody diarrhea outbreak serious (laboratory results indicate the bacteria causing the illness is E. coli O157) (ABC15). It’s not just the bugs you can see, but sanitation is very important to the health and safety of patrons and staff.

What flies, spreads disease and is totally yucky?

 

Well in general flying insects but specifically House Flies. They live and breed in very dirty conditions and can move from one area to another very quickly. You know how I feel about these little bugs, I hate them! It’s that whole thing about throwing up on your food and then lapping it up that just revolts me.

I read someplace a few years ago that people will tolerate a fly but not a cockroach, not me I would rather have a cockroach in my home than a fly. I’m also amazed that at dining places, they are also more worried about roaches than flies and will allow them to congregate on windows and tables. They fly and can be on a pile of dog stuff and on your food in a second while the lowly little cockroach at least has to crawl to your food.

So in my opinion if you own a restauarant get a few machines to handle the ocassional flies and I’ll make a point of eating at your place.

As I stated yesterday I think it is imperative that you discuss with staff and or management if you locate a bug while dining. Finding a bug isn’t the end of the world, it could have flown in, or someone could have brought it in so don’t panic. So this last week I decided to replace a piece of carpeting in my dining room. I never liked it in the dining room to begin with and finally decided to put in tile. After removing the carpet I noticed a very large crack and YES I had the termite expert (Mike) come to my house and drill it before putting in the tile.

Nothing looks worse than tile that has to be drilled after you notice the termites.

So a piece of  free advice – if you are replacing a floor with wood or tile, take the time and treat for termites. Most termite companies would prefer not to drill a new tile, it will never look the same.

Before replacing a floor take the time to have it fixed, I don’t like drilling new wood or tile floors. Trust me on this one, please!
